Brenda and Jerry Johnson turned a family recipe for potato bologna into a sideline business at their grocery store, Countryside Market, in Bertrand. Last year, they made 2,000 pounds of potato bologna to sell, and the item, usually served around Christmastime, now is available year-round.

BERTRAND - What started as a family holiday tradition of making
potato bologna has become a side business for Jerry and Brenda
Johnson at their grocery store in Bertrand.
Charlie's Potato Bologna, named after Jerry's father, Charlie,
who developed the recipe in the 1970s, is requested year-round by
customers. It is featured at Nebraska football tailgate parties and
makes it into many area Swedish feasts around Christmas time.
